About Fresh Young Ginger
Young or baby ginger (halia muda, 仔姜, 嫩姜 , 若い新生姜) is quite different from regular mature ginger. It is juicy and plump, with a pink blush. It is mild and tender enough to eat raw in salads. Even the skin on it is extremely thin that you can easily rub it off. It is sharp, meaty, and juicy with a mild spicy taste.
Fresh young ginger is highly perishable, harvesting about 150 - 200 days after planting. Delicate process during harvest and post-harvest handling make the price of young ginger is more expensive then the mature ginger.
Mature ginger has a very tough hide and is very potent whereas baby ginger is very tender; people can simply chop and use it without having to peel through a tough skin and fibrous center. Growers should be aware that storage time after harvest is much shorter for baby ginger than it is for mature ginger, which can often last for months if stored properly. Baby ginger can be stored at room temperature for only about two to three weeks after harvest.
Young ginger has been used in many favorite Asian food recipes such as Japanese Pickled Ginger (gari) or ガリ consumed together with sushi as condiment. But you'll find it is delicious in salads, stir fries, and cocktails as well.
