Indonesian Ginger at Glance

Indonesian ginger (species: Zingiber officinale) is relatively smaller than those from other countries. But Indonesian ginger has an upper hand in its aroma, taste and content of essential oil. In fact, there are three varieties of ginger being cultivated in Indonesia which can meet the requirement in various countries and sectors.

The three ginger varieties are:
1. Elephant ginger (jahe gajah) which is not so spicy therefore widely accepted in various export destinations.
2. Small white ginger (jahe emprit) which is more acceptable at domestic market due to its stronger aroma and flavor which is favourable in many Indonesian cuisines.
3. Red ginger (jahe merah) which sees more limited usage due to its very strong taste
