Ginger: Dry or Fresh?
In many aspects, dry ginger is a better alternative than fresh ginger:
- One kg of dried ginger is made of 4 kg fresh ginger, so you can use dry ginger only a quarter as you used the fresh one.
- Dried ginger has much longer shelf life up to 3 years if you keep it refrigerated
- It contents higher essential oil than fresh ginger
- Dried ginger has a more intense flavor than fresh ginger
- Dried ginger can be used as ingredient of many food and beverages
- Dried ginger is allowed to import in many countries with standard customs clearance and plant quarantine processes. Whereas, fresh ginger is considered as high risk of biosecurity by certain countries such as Australia, because fresh ginger can be used to grow ginger (like seeds). Therefore, in certain countries like Australia and New Zealand, importing fresh ginger must comply with very strict regulation and plant quarantine procedures.
Dried ginger is used as an important ingredient of finished goods such as ginger candy, ginger powder, ginger ale, ginger beer, ginger oil and oleoresin. Sliced and dried ginger is a perfect raw material to extract ginger essential oil by steam distillation process. Also, it can be easily ground using milling equipment to make ginger powder that is widely used by pharmaceuticals, and food and beverages industries as well as used as spices.
